Method

Restoring cooking progress…
  1. 01

    Read, weigh and prepare

    5 minHands-on

Read the full method, check the stated equipment and prepare every listed ingredient. Keep dough, filling, wash, topping and handling groups separate. Weigh edible parts as described in the ingredient list.

  2. 02

    Prepare tin and bloom gelatine

    4 minHands-on

Lightly oil the square tin and line with parchment. Mix dusting icing sugar and dusting cornflour and dust the lining generously. Sprinkle gelatine over the listed blooming water in the mixer bowl. Keep syrup water separate.

  3. 03

    Bloom gelatine

    10 minHands-off · check as directed

Leave for 10 minutes until hydrated.

  4. 04

    Dissolve syrup ingredients

    4 minHands-on

Warm marshmallow sugar, glucose, syrup water and salt in a deep saucepan, stirring until dissolved.

  5. 05

    Boil to temperature

    10 minHands-on

Stop stirring and boil to 116°C, monitoring continuously with the thermometer clear of the pan base. Time is an estimate; temperature controls readiness.

  6. 06

    Pour syrup slowly

    2 minHands-on

With the mixer on low, pour hot syrup down the bowl side onto bloomed gelatine, avoiding the whisk.

  7. 07

    Whip marshmallow

    10 minHands-on

Increase gradually to high and whisk for 8–12 minutes until thick, white, fluffy and lukewarm. Add vanilla towards the end.

  8. 08

    Fill and dust

    3 minHands-on

Immediately scrape into the tin with an oiled spatula, level and dust the top with the sugar-and-cornflour mixture.

  9. 09

    Set marshmallow

    360 minHands-off · check as directed

Leave at room temperature for at least 6 hours or overnight.

  10. 10

    Cut and coat

    10 minHands-on

Lift out, cut with a lightly oiled knife and coat cut faces with remaining dusting mixture. Shake off excess.
