Pasta bake

  • 450 gdried penne or fusilli
  • 50 gbutter
  • 50 gplain flour
  • 650 mlwhole milk, warmed
  • 300 gpassata
  • 1 tspDijon mustard
  • 1/2 tspdried oregano
  • 1 tspfine salt, plus 2 tsp for pasta water
  • 1/2 tspblack pepper
  • 3 × 145g tinstuna in spring water, drained (about 300g drained)
  • 150 gfrozen sweetcorn
  • 150 gfrozen peas
  • 150 gmature Cheddar, grated

Topping

  • 60 gpanko breadcrumbs
  • 50 gmature Cheddar, grated
  • 1 tbspolive oil

Method

    Heat the oven to 200°C fan

    Heat the oven to 200°C fan. Boil the pasta in water seasoned with 2 tsp salt for 2 minutes less than the packet time. Reserve 150ml pasta water, then drain.

    Melt the butter

    Melt the butter in the saucepan. Add the flour and cook for 2 minutes. Gradually whisk in the warm milk, then simmer for 4 minutes until lightly thickened.

    Whisk in passata

    3 min

    Whisk in passata, mustard, oregano, salt and pepper. Remove from the heat and stir in 150g Cheddar.

    Fold in the drained tuna

    Fold in the drained tuna in large flakes, frozen sweetcorn, frozen peas and pasta. Add 50-100ml pasta water so the mixture is generously sauced.

    Transfer to the baking dish

    Transfer to the baking dish. Mix the breadcrumbs, 50g Cheddar and olive oil, then scatter evenly over the top.

    Bake on a tray

    22 min

    Bake on a tray for 20-25 minutes until bubbling and golden. Rest for 5 minutes before serving.
