  1. 01

    Read, weigh and prepare

    5 minHands-on

Read the full method, check the stated equipment and prepare every listed ingredient. Keep dough, filling, wash, topping and handling groups separate. Weigh edible parts as described in the ingredient list.

Cover dough fruit with hot water if dry.

Soak for 15 minutes if needed.

  4. 04

    Drain and dry

    3 minHands-on

Drain very well, pat dry and cool the fruit before mixing it into dough.

  5. 05

    Mix enriched dough

    2 minHands-on

Mix all dough ingredients except dough butter and any dried fruit. Keep filling, wash and finishing ingredients separate. Cover.

  6. 06

    Rest covered for 20 minutes.

  7. 07

    Develop gluten

    7 minHands-on

Knead on low for 6–8 minutes until the dough begins stretching smoothly.

  8. 08

    Add butter gradually

    7 minHands-on

Add soft dough butter in small pieces and knead for 5–8 minutes until elastic and able to stretch into a thin translucent sheet. Keep dough below about 27°C; if greasy or warm, add a refrigerator pause before continuing.

  9. 09

    Add fruit

    2 minHands-on

Knead in the well-drained, cooled, dried dough fruit on low just until evenly distributed.

  10. 10

    Finish bulk fermentation

    382 minHands-off · check as directed

Allow 5–9 hours in total from adding the starter, including mixing, rests and folds already completed. At 22–26°C use the dough rather than the clock: At 24–26°C aim for 60–75% growth, a rounded surface and an aerated feel. Enriched dough can be slower at 22°C. Keep covered and stop before collapse.

  11. 11

    Divide and round

    6 minHands-on

Divide equally according to yield and round gently. Cover.

  12. 12

    Rest: Relax

    10 minHands-off · check as directed

    Rest for 10 minutes.

  13. 13

    Flatten teacakes

    5 minHands-on

Flatten gently to about 9 cm wide and 1½ cm thick and arrange on lined trays. Cover.

  14. 14

    165 minHands-off · check as directed
