    20 minHands-off · check as directed

    Rest covered for 20 minutes.

  4. 04

    Finish bulk fermentation

    254 minHands-off · check as directed

Allow 4–7 hours in total from adding the starter, including mixing, rests and folds already completed. At 22–26°C use the dough rather than the clock: Aim for 60–70% growth and a light, aerated dough.

  8. 08

    6 minHands-on

Divide equally according to yield and form short logs. Cover.

  9. 09

    Rest: Relax

  11. 11

    Proof

    120 minHands-off · check as directed

  16. 16

    Bake knots

    18 minHands-off · check as directed
