Adjust and divide batter
2 minHands-onThe batter should pour in a thick continuous ribbon and spread by itself. Add optional extra batter water gradually if needed. Divide batter and the raising-agent ingredients proportionally between pan batches.
- 05
Heat and grease
5 minHands-onHeat the pan for 5 minutes over low to medium-low heat. Grease rings thoroughly and the pan lightly with cooking oil.
- 06
Cook crumpets in batches
24 minHands-onStir this batch’s baking powder, bicarbonate and raising-agent water into its batter immediately before cooking. Fill greased rings about 1 cm deep. Cook for 7–10 minutes until holes open and tops lose their wet shine. Adjust heat if bases darken too soon; cover briefly if tops set slowly. Remove rings with tongs, then turn for 30–60 seconds if needed. Centres must be springy without wet batter. Regrease before the next batch. Repeat uncrowded loads until the batch is cooked; this timer includes all planned pan loads.
