Method

Restoring cooking progress…
  1. 01

    Read, weigh and prepare

    5 minHands-on

Read the full method, check the stated equipment and prepare every listed ingredient. Keep dough, filling, wash, topping and handling groups separate. Weigh edible parts as described in the ingredient list.

  2. 02

    Mix enriched dough

    2 minHands-on

Mix all dough ingredients except dough butter and any dried fruit. Keep filling, wash and finishing ingredients separate. Cover.

  3. 03

    Hydrate

    20 minHands-off · check as directed

    Rest covered for 20 minutes.

  4. 04

    Develop gluten

    7 minHands-on

Knead on low for 6–8 minutes until the dough begins stretching smoothly.

  5. 05

    Add butter gradually

    7 minHands-on

Add soft dough butter in small pieces and knead for 5–8 minutes until elastic and able to stretch into a thin translucent sheet. Keep dough below about 27°C; if greasy or warm, add a refrigerator pause before continuing.

  6. 06

    Finish bulk fermentation

    384 minHands-off · check as directed

Allow 5–9 hours in total from adding the starter, including mixing, rests and folds already completed. At 22–26°C use the dough rather than the clock: At 24–26°C aim for 60–75% growth, a rounded surface and an aerated feel. Enriched dough can be slower at 22°C. Keep covered and stop before collapse.

  7. 07

    Chill dough

    60 minHands-off · check as directed

Chill covered for 1 hour so the enriched dough is easier to handle.

  8. 08

    Prepare fruit

    2 minHands-on

Cover filling fruit with hot water if dry.

  9. 09

    Soften fruit

    15 minHands-off · check as directed

Soak for 15 minutes if needed.

  10. 10

    Drain fruit

    3 minHands-on

Drain very well, pat dry and let cool; keep filling ingredients separate from the glaze.

  11. 11

    Fill and cut spirals

    15 minHands-on

Mix soft filling butter with filling sugar and spices, including filling flour where listed. Roll dough to about 30 × 35 cm, spread filling leaving a 2 cm sealing border and scatter filling fruit if listed. Roll snugly, seal and cut evenly according to yield. Arrange in the prepared tin and cover.

  12. 12

    Proof

    225 minHands-off · check as directed

Allow 3–5 hours; the timer is an estimate. The buns or loaf should be clearly swollen and aerated; a gentle press should recover slowly. Begin heating the oven near the end of proofing.

  13. 13

    Start heating the oven

    1 minHands-on

Heat the oven to 170°C fan.

  14. 14

    Allow the oven to heat

    14 minHands-off · check as directed

Allow about 15 minutes of heating in total and check that the oven has reached 170°C fan.

  15. 15

    Finish proofing

    14 minHands-off · check as directed

Continue covered until ready. The buns or loaf should be clearly swollen and aerated; a gentle press should recover slowly.

  16. 16

    Load the prepared bake

    2 minHands-on

Check the oven has reached the stated setting and carefully put in the prepared tray or tin.

  17. 17

    Bake

    32 minHands-off · check as directed

Bake at 190°C conventional / 170°C fan for 28–35 minutes, until evenly golden and about 92–94°C in the dough. Cover loosely if browning before the centre is cooked.

  18. 18

    Take out of the oven

    1 minHands-on

Take the bake out of the oven and set it on a heatproof surface.

  19. 19

    Make the glaze syrup

    3 minHands-on

Heat glaze sugar and glaze water, stirring until dissolved; boil for 1 minute and take off the heat.

  20. 20

    Glaze

    2 minHands-on

Brush the hot bake with the glaze syrup.

  21. 21

    Cool

    10 minHands-off · check as directed

Leave in the tin for 10 minutes.

  22. 22

    Unmould

    1 minHands-on

    Lift onto a rack.

  23. 23
