Method

Restoring cooking progress…
  1. 01

    Mix the slurry

    2 minHands-onStart 35 min before serving

Mix the cornflour with its cold water until smooth. Set aside and stir again before using.

  2. 02

    Prepare the juices

    2 minHands-onStart 33 min before serving

Strain the juices from an already roasted chicken into a jug. Keep any roasting-tin residue for deglazing. If using extra chicken stock instead, put it in the jug and skip fat settling and skimming.

  3. 03

    Let the fat separate

7 minHands-off · check as directedStart 31 min before serving

Let the strained roasting juices stand so the fat rises while you reduce the wine. Skip this wait when using stock.

  4. 04

    Deglaze with wine

    2 minHands-onStart 31 min before serving

Use a hob-safe roasting tin with its browned residue if available; otherwise use a saucepan. Add the wine over medium heat and scrape up any browned deposits.

  5. 05

    Reduce the wine

5 minHands-off · check as directedStart 29 min before serving

Simmer for 3–5 minutes, until only a small, concentrated residue remains. Keep an eye on the pan and do not let it dry out.

  6. 06

    Defat the juices

    2 minHands-onStart 24 min before serving

Spoon the fat off the settled roasting juices, if using them. Keep the prepared liquid ready for the pan.

  7. 07

    Add the stock and juices

    2 minHands-onStart 22 min before serving

Add the gravy stock, prepared juices or extra stock, and optional Worcestershire sauce. Bring to a brisk simmer.

  8. 08

    Reduce the gravy

12 minHands-off · check as directedStart 20 min before serving

Simmer briskly for about 10–15 minutes until the flavour is concentrated and the consistency is close to what you want. Watch the level and avoid reducing it too far.

  9. 09

    Strain the gravy

    2 minHands-onStart 8 min before serving

Strain into a clean saucepan, discarding solids.

  10. 10

    Thicken if needed

    1 minHands-onStart 6 min before serving

Stir the slurry again and whisk in a little at a time, only if needed.

  11. 11

    Cook through the cornflour

    2 minHands-onStart 5 min before serving

If slurry was added, simmer for 2 minutes while stirring. If no thickener was needed, check the flavour and consistency instead.

  12. 12

    Finish with butter

    2 minHands-onStart 3 min before serving

Take off the heat and whisk in the cold butter. Adjust with salt, pepper and lemon juice to taste.

  13. 13

    Serve or keep warm

    1 minHands-onStart 1 min before serving

Serve hot, or keep over very low heat without boiling again.
