Method

Restoring cooking progress…
  1. 01

    Read, weigh and prepare

    5 minHands-on

Read the full method, check the stated equipment and prepare every listed ingredient. Keep dough, filling, wash, topping and handling groups separate. Weigh edible parts as described in the ingredient list.

  2. 02

    Mix preferment

    3 minHands-on

Mix preferment flour, preferment water and preferment yeast until combined. Cover.

  3. 03

    Ferment overnight

    600 minHands-off · check as directed

Leave at 20–22°C for 8–12 hours, until aerated and fragrant.

  4. 04

    Develop final dough

    10 minHands-on

Tear preferment into pieces. Add final-dough flour, final yeast, sugar, salt, milk, whole eggs and yolks. Knead for about 10 minutes until stretchy.

  5. 05

    Enrich gradually

    12 minHands-on

Add final-dough butter gradually, then orange zest, lemon zest and vanilla. Knead for 10–15 minutes until very elastic, keeping the dough below about 27°C; add a refrigerator pause if greasy or warm.

  6. 06

    Add fruit

    2 minHands-on

Mix in raisins and candied orange peel gently.

  7. 07

    First rise

    180 minHands-off · check as directed

Cover and rise at 24–26°C for 2–4 hours until roughly doubled; readiness matters more than the timer.

  8. 08

    Prepare hanging supports

    5 minHands-on

Push metal skewers through the lower sides of the paper moulds so they can support the baked loaves. Prepare stable containers for suspending them upside down.

  9. 09

    Divide and round

    4 minHands-on

Divide equally according to loaf yield, round gently and place in the moulds. Cover loosely.

  10. 10

    Proof

    165 minHands-off · check as directed

Allow 2–4 hours at 24–26°C; the timer is an estimate. The dough crowns should reach the mould rims. Begin heating the oven near the end of proofing.

  11. 11

    Start heating the oven

    1 minHands-on

Heat the oven to 160°C fan.

  12. 12

    Allow the oven to heat

    14 minHands-off · check as directed

Allow about 15 minutes of heating in total and check that the oven has reached 160°C fan.

  13. 13

    Finish proofing

    14 minHands-off · check as directed

Continue covered until ready. The dough crowns should reach the mould rims.

  14. 14

    Load the prepared bake

    2 minHands-on

Check the oven has reached the stated setting and carefully put in the prepared tray or tin.

  15. 15

    Bake panettone

    35 minHands-off · check as directed

Bake at 180°C conventional / 160°C fan for 30–40 minutes until browned and about 93–95°C in the centre. Cover with foil if colouring early.

  16. 16

    Invert immediately

    3 minHands-on

Take out and immediately suspend upside down by the skewers between stable supports, keeping the loaves clear of surfaces.

  17. 17

    Cool inverted

    240 minHands-off · check as directed

Cool upside down for at least 4 hours to prevent collapse.

  18. 18

    Remove skewers and wrap

    2 minHands-on

Remove the skewers only once fully cool and wrap the loaves.
