Method

Restoring cooking progress…
  1. 01

    Read, weigh and prepare

    5 minHands-on

Read the full method, check the stated equipment and prepare every listed ingredient. Keep dough, filling, wash, topping and handling groups separate. Weigh edible parts as described in the ingredient list.

  2. 02

    Start heating the oven

    1 minHands-on

Heat the oven to 90°C fan.

  3. 03

    Allow the oven to heat

    14 minHands-off · check as directed

Allow about 15 minutes of heating in total and check that the oven has reached 90°C fan.

  4. 04

    Make meringue

    8 minHands-on

Use a completely clean grease-free bowl and whisk, with no yolk in the whites. Whisk egg whites to soft peaks, add caster sugar gradually and whisk until glossy and stiff. Continue briefly if a rubbed sample is gritty, then whisk in vinegar and vanilla.

  5. 05

    Shape nests

    5 minHands-on

Pipe or spoon nests about 7 cm wide onto the lined tray, with hollows for any separately planned filling.

  6. 06

    Load the prepared bake

    2 minHands-on

Check the oven has reached the stated setting and carefully put in the prepared tray or tin.

  7. 07

    Dry meringues

    105 minHands-off · check as directed

Dry at 110°C conventional / 90°C fan for 1½–2 hours until shells are dry and lift easily from the paper. Thick nests need the longer time; reduce heat if colouring.

  8. 08

    Switch oven off

    1 minHands-on

Turn the oven off, leaving the meringues inside.

  9. 09

    Cool in switched-off oven

    60 minHands-off · check as directed

Leave in the switched-off oven for at least 1 hour and until completely cool.

  10. 10

    Take out of the oven

    1 minHands-on

Remove fully cool meringues and pack airtight. Any filling is separately planned and added just before serving.
