Method

Restoring cooking progress…
  1. 01

    Read, weigh and prepare

    5 minHands-on

Read the full method, check the stated equipment and prepare every listed ingredient. Keep dough, filling, wash, topping and handling groups separate. Weigh edible parts as described in the ingredient list.

  2. 02

    Mix and knead yeast dough

    6 minHands-on

Mix dough flour, instant yeast, dough sugar, dough salt, dough liquid and dough egg if listed. Knead on the dough hook for about 5 minutes, keeping dough butter separate initially.

  3. 03

    Add dough butter

    7 minHands-on

Add dough butter gradually and knead another 5–8 minutes until smooth and stretchy. Pause if warm or greasy. Add optional extra dough milk only if unusually stiff.

  4. 04

    First rise

    90 minHands-off · check as directed

Cover in a lightly greased bowl and leave 1–2 hours at 22–26°C until roughly doubled and aerated; a cooler kitchen needs longer.

  5. 05

    Divide and round

    4 minHands-on

Divide equally according to yield, round loosely and cover.

  6. 06

    Rest: Relax

    10 minHands-off · check as directed

    Rest for 10 minutes.

  7. 07

    Shape buns

    8 minHands-on

Shape sealed cylinders about 12 cm long and arrange seam down with 2–3 cm gaps on the lined tray. Cover.

  8. 08

    Proof

    53 minHands-off · check as directed

Allow 45–90 minutes; the timer is an estimate. Buns should be puffy and slow to spring back from a gentle press. Begin heating the oven near the end of proofing.

  9. 09

    Start heating the oven

    1 minHands-on

Heat the oven to 170°C fan.

  10. 10

    Allow the oven to heat

    14 minHands-off · check as directed

Allow about 15 minutes of heating in total and check that the oven has reached 170°C fan.

  11. 11

    Finish proofing

    14 minHands-off · check as directed

Continue covered until ready. Buns should be puffy and slow to spring back from a gentle press.

  12. 12

    Load the prepared bake

    2 minHands-on

Check the oven has reached the stated setting and carefully put in the prepared tray or tin.

  13. 13

    Bake buns

    18 minHands-off · check as directed

Bake at 190°C conventional / 170°C fan for 15–20 minutes until light golden and about 92–94°C inside.

  14. 14

    Take out of the oven

    1 minHands-on

Take the bake out of the oven and set it on a heatproof surface.

  15. 15

    Cool

    45 minHands-off · check as directed

Cool completely on a rack before icing.

  16. 16

    Ice buns

    6 minHands-on

Mix icing sugar, icing vanilla, optional icing colour and enough icing water for a thick coating. Spread a strip over each cold bun without running down the sides.

  17. 17

    Set icing

    30 minHands-off · check as directed

Let icing set for 30 minutes.
