Method

  1. 01

    Put berries

    6 min

Put berries, maple syrup and lemon juice in a saucepan. Simmer for 5-7 minutes until hot and syrupy but some fruit remains whole. Keep warm.

  2. 02

    Whisk eggs

    3 min

Whisk eggs, milk, vanilla, cinnamon, caster sugar and salt in the shallow dish.

  3. 03

Lay in four bread slices and soak

    3 min

Lay in four bread slices and soak for about 45 seconds per side, slightly longer for very stale or thick bread. They should absorb custard without collapsing.

  4. 04

Heat half the butter and oil

    4 min

Heat half the butter and oil in the frying pan over medium heat. Cook the soaked bread for 3-4 minutes per side until deep gold and set through. Keep warm in a low oven and repeat.

  5. 05

    Serve two slices per person

    3 min

Serve two slices per person with yoghurt and warm berries. Dust lightly with icing sugar only if desired.
