Method

Restoring cooking progress…
  1. 01

    Make the shawarma marinade

    8 minHands-on

Cut only the very large chicken thighs in half, leaving the pieces substantial. Mix the yoghurt, olive oil, lemon juice and zest, garlic, spices, salt and pepper, then coat the chicken thoroughly.

  2. 02

    Marinate the chicken

    150 minHands-off · check as directed

Cover the chicken and refrigerate for 2–3 hours. This is enough time for the yoghurt, lemon and spices to flavour the thighs; an overnight marinade is not needed.

  3. 03

    Mix the flatbread dough

    5 minHands-on

Combine the flour, baking powder and salt, then add the Greek yoghurt and olive oil. Mix until a shaggy, slightly tacky dough forms.

  4. 04

    Knead the flatbread dough

    4 minHands-on

Knead the dough for 3–4 minutes until reasonably smooth.

  5. 05

    Rest the flatbread dough

    35 minHands-off · check as directed

Cover and rest for 30–45 minutes so it becomes easier to roll.

  6. 06

    Make the toum-style sauce

    5 minHands-on

Mix the mayonnaise, finely grated garlic, lemon juice, olive oil and salt until smooth. Refrigerate until serving; it should taste deliberately sharp and strongly garlicky.

  7. 07

    Arrange the marinated chicken

    3 minHands-on

Place the marinated thighs on a foil-lined tray, shaking off only the excess marinade

  8. 08

    Roast the marinated chicken

    23 minHands-off · check as directed

Roast at 210°C fan for 20–25 minutes. The chicken should be cooked through with the edges beginning to darken.

  9. 09

    Divide and roll the flatbreads

    10 minHands-on

Divide the rested dough into equal balls and lightly flour the worktop. Roll each into a rough 18–20cm circle; they do not need to be perfectly round.

  10. 10

    Cook the flatbreads

    14 minHands-on

Heat a large dry frying pan over high heat and cook each flatbread for 60–90 seconds on the first side and 45–60 seconds on the second. Look for bubbles, deep brown patches and a few lightly charred areas.

  11. 11

    Char the chicken

    3 minHands-on

If your oven has a grill, put the chicken under a very hot grill for another 2–4 minutes. Aim for dark, almost burnt-looking patches without drying out the meat.

  12. 12

    Rest the chicken

    7 minHands-off · check as directed

Rest the chicken for 5–7 minutes

  13. 13

    Brush and wrap the flatbreads

    3 minHands-on

Mix the butter with the grated garlic and small pinch of salt, then brush the hot flatbreads very lightly. Stack them immediately and wrap in a clean tea towel to trap steam and keep them soft.

  14. 14

    Slice the rested chicken

    3 minHands-on

Slice across the thighs into strips. Keep any juices that collect on the chopping board.

  15. 15

    Make the fresh herb salad

    6 minHands-on

Thinly slice the cucumber, finely shred the lettuce and roughly chop the parsley and mint. Toss with the lemon juice, olive oil, salt and black pepper only a few minutes before serving so the salad stays crisp.

  16. 16

Prepare the halloumi and hot honey

    4 minHands-on

Cut the halloumi into thick slices or batons and pat it thoroughly dry. Mix the runny honey with the chilli flakes.

  17. 17

    Brown the halloumi

    5 minHands-off · check as directed

Heat the olive oil from the halloumi ingredients in a frying pan over medium-high heat. Cook the halloumi for 1½–2 minutes per side, until deeply golden.

  18. 18

    Crisp the sliced chicken

    3 minHands-on

Heat a large frying pan until very hot, add the reserved 1 tsp olive oil and spread the sliced chicken in a single layer. Leave for 60–90 seconds, turn and cook for about 1 minute more, then pour the resting juices back over the meat.

  19. 19

    Check the sauce

    1 minHands-on

Stir the chilled toum-style sauce and taste before serving.

  20. 20

    Glaze the halloumi

    1 minHands-on

Reduce the heat, add the chilli honey and turn the halloumi for 20–30 seconds, just until glazed. Finish with the sesame seeds and a small squeeze of lemon; do not let the honey burn.

  21. 21

    Assemble the platter

    4 minHands-on

Arrange the crisp chicken, hot-honey halloumi, and fresh herb salad on a large platter, with the sauce alongside. Serve immediately with the warm flatbreads for tearing and wrapping.

Structurally checked

Chicken marinates for 2–3 hours and remains in substantial pieces.

Roasted garlic is completely soft before it is mashed into the yoghurt.

Potatoes are parboiled, roughed up and roasted without overcrowding until very crisp.

Chicken is cooked through, charred at the edges, rested, sliced and given the final high-heat sear.

Flatbreads have browned bubbles and are stacked in a tea towel while hot.

Halloumi is deeply golden before the honey goes in, and the honey is glazed only briefly so it does not burn.

The herb salad is dressed only a few minutes before serving.
