  1. 01

    Prepare the ingredients

    18 minHands-on

Slice the steak across the grain as listed. Grate the garlic, ginger and pear; slice the onion and spring onions. Wash and dry the lettuce leaves. Slightly firm chilled steak is easier to slice.

  2. 02

    Marinate the beef

    3 minHands-on

Mix the soy, sugar, sesame oil, garlic, ginger, pear and pepper. Toss with the beef and onion, cover and refrigerate.

  3. 03

    Marinate

    30 minHands-off · check as directed

Marinate for at least 30 minutes, or up to 4 hours in the fridge.

  4. 04

    Drain and heat the pan

    3 minHands-on

Drain excessive pooled marinade. Heat a large frying pan over high heat with some of the neutral oil.

  5. 05

    Cook in batches

    12 minHands-on

Cook the beef in uncrowded batches for 2 to 3 minutes per batch, turning until browned and cooked through. Add the remaining neutral oil between batches as needed; avoid crowding.

  6. 06

    Finish

    1 minHands-on

Return all the beef to the pan with the spring onions and toss for 1 minute.

  7. 07

    Serve

    1 minHands-on

Scatter with sesame seeds and serve hot with the dry lettuce leaves alongside.
