Restoring cooking progress…
  1. 01

    Read, weigh and prepare

    5 minHands-on

Read the full method, check the stated equipment and prepare every listed ingredient. Keep dough, filling, wash, topping and handling groups separate. Weigh edible parts as described in the ingredient list.

  2. 02

    Prepare tin and wafer

    4 minHands-on

Line the square tin and place a trimmed wafer-paper sheet in the base. Have the top sheet and an oiled spatula ready.

  3. 03

    Start heating the oven

    1 minHands-on

Heat the oven to 160°C fan.

  4. 04

    Allow the oven to heat

    14 minHands-off · check as directed

Allow about 15 minutes of heating in total and check that the oven has reached 160°C fan.

  5. 05

    Arrange nuts

    2 minHands-on

Spread almonds and pistachios on a tray.

  6. 06

    Load the prepared bake

    2 minHands-on

Check the oven has reached the stated setting and carefully put in the prepared tray or tin.

  7. 07

    Toast nuts

    9 minHands-off · check as directed

Toast for 8–10 minutes without scorching.

  8. 08

    Keep nuts warm

    1 minHands-on

Reduce the oven to 80°C fan and keep the nuts warm.

  9. 09

    Prepare foamy whites

    4 minHands-on

Whisk pasteurised egg white until foamy and whisk in the egg-white sugar. Keep the stand mixer ready before starting the syrup; this sequence avoids leaving hot sugar unattended.

  10. 10

    Dissolve syrup sugar

    3 minHands-on

Heat syrup sugar, glucose and water gently, stirring until dissolved.

  11. 11

    Cook syrup to temperature

    12 minHands-on

Boil without stirring to 135°C, add honey carefully and continue to 145°C. Watch continuously and keep the thermometer tip clear of the pan base; the time is an estimate and temperature controls readiness.

  12. 12

    Pour into whites

    3 minHands-on

With the mixer on medium, pour hot syrup in a thin stream down the bowl side, avoiding the whisk.

  13. 13

    Whisk nougat

    5 minHands-on

Whisk for 4–6 minutes until thick and glossy, then add vanilla.

  14. 14

    Fold and press promptly

    4 minHands-on

Take warm nuts from the oven, fold them through immediately and press the hot mixture into the prepared tin with the oiled spatula. Cover with the top wafer sheet and press level.

  15. 15

    Set nougat

    360 minHands-off · check as directed

Leave at cool room temperature for at least 6 hours, or overnight.

  16. 16

    Cut and wrap

    5 minHands-on

Cut into pieces with a lightly oiled knife and wrap individually.
