Clear and checked
Peel the onions and cut across into 1.5cm slices. Separate into rings, reserving tiny centres for another dish. Pat dry.
Heat the oven to 120°C fan and place a wire rack over a tray. Heat the oil to 180°C. Never fill a saucepan more than halfway and never leave hot oil unattended.
Put 40g flour in one bowl and panko in another. In a third bowl whisk remaining flour, cornflour, baking powder, paprika and salt. Whisk in 180ml sparkling water, adding more only until the batter resembles single cream.
Working in small batches, dust rings with flour, dip in batter, let excess drip away and coat in panko.
Fry for 2-3 minutes, turning once, until crisp and golden. Keep the oil close to 180°C and avoid crowding.
Drain on the rack, season lightly and keep warm in the oven while frying the rest. Serve immediately. Cool used oil fully before handling.
