Clear and checked
Put both cabbages, carrot and onion in the large bowl. Add 1/2 tsp salt, toss and leave for 10 minutes. This lightly seasons and softens the raw vegetables.
Whisk mayonnaise, yoghurt, vinegar, mustard, honey, remaining salt and pepper in the small bowl.
Pour the dressing over the vegetables and toss thoroughly, using clean hands or salad servers to separate the strands.
Fold through the herbs. Cover and chill for 30 minutes, then taste and adjust vinegar or salt.
Serve within 24 hours for the best crunch. Keep refrigerated and do not leave at room temperature for more than 2 hours.
