  • 1.5 kgfloury potatoes, such as Maris Piper, peeled and cut into even 4cm chunks
  • 2 tspfine salt, divided
  • 90 gunsalted butter, cubed
  • 180 mlwhole milk
  • 1/4 tspwhite or black pepper
  • a pinchground nutmeg (optional)

    Put the potatoes

    Put the potatoes in a large pan, cover with cold water by 3cm and add 1 1/2 tsp salt. Bring to a steady simmer and cook for 15-20 minutes until a knife slides through without resistance.

    Drain well

    Drain well. Return the potatoes to the hot pan over the lowest heat for 1-2 minutes, shaking gently, until surface moisture has evaporated.

    Warm the milk and butter together only

    Warm the milk and butter together only until the butter melts; do not boil.

    Rice the potatoes back

    Rice the potatoes back into the warm pan, or mash until no lumps remain. Fold in the warm milk mixture in three additions. Do not blend or beat aggressively, which releases starch and makes mash gluey.

    Add the remaining salt

    20 min

    Add the remaining salt, pepper and optional nutmeg. Taste, cover and keep warm for no more than 20 minutes. If it tightens, fold in 1-2 tbsp warm milk before serving.
