  • 500 gcold cooked roast or boiled potatoes
  • 300 gcold cooked cabbage, Brussels sprouts or mixed greens, squeezed dry and chopped
  • 4spring onions, finely sliced
  • 1 tbspwholegrain mustard
  • 1/2 tspfine salt
  • 1/4 tspblack pepper
  • 20 gbutter
  • 1 tbspvegetable oil

    Roughly crush the cold potatoes

    Roughly crush the cold potatoes in a bowl, leaving small chunks. Add the chopped greens, spring onions, mustard, salt and pepper and mix without making a puree.

    Heat half the butter and oil in the frying pan over medium heat. Add the mixture and press it into an even 2-3cm layer.
