Crisp-edged back bacon in soft buttered bread with a sharp brown-sauce butter that prevents dry corners.

Heat a large frying pan over medium-high heat. Add oil only if needed. Lay in the bacon without overlapping; cook in two batches if necessary.
Cook for 3-5 minutes per side, turning once or twice, until the fat is golden and the bacon is cooked to preference. Drain for 30 seconds on kitchen paper.
Mix half the butter with the brown sauce or ketchup. Spread plain butter on two bread slices and sauce butter on the other two.
Divide the hot bacon between the plain-buttered slices, season with pepper and close with the sauce sides facing inward.
Press lightly, cut in half and serve immediately.
